Pumpkin Recipes

Since Meijer has sale on canned 100% Whole Pumpkin this week I decided to put together some recipes from "Hungry Girl" that contains pumpkins.  All recipes came from Food Network and if you click on the recipe title it will take you to the website. 

Upside-Down Pumpkin Pie

Ingredients
1 (15-ounce) can pure pumpkin
1 (12-ounce) can evaporated fat-free milk
1/2 cup fat-free liquid egg substitute
2/3 cup granulated sugar
2 teaspoons pumpkin pie spice
2 sheets (8 crackers) low-fat cinnamon graham crackers, finely crushed
Fat-free whipped topping (from an aerosol canister).

Directions

Preheat the oven to 350 degrees F.
Combine all of the ingredients except the graham crackers and optional ingredients in a bowl, and mix thoroughly.
Place the mixture in a deep-dish pie pan sprayed lightly with nonstick spray, and bake in the oven for 45 minutes. (It will remain a little soft, like pie filling.)
Refrigerate until completely chilled and firm, at least 2 hours.
Top evenly with crushed graham crackers. Add whipped topping and cinnamon, if you like.
Serve and enjoy! 



 Dreamy Chocolate Peanut Butter Fudge

Ingredients

2 cups canned pure pumpkin
1 (18.3-ounce) box fudge brownie mix
2 tablespoons light chocolate syrup
2 tablespoons reduced-fat peanut butter, softened

 

Directions

Preheat the oven to 350 degrees F.
In a large mixing bowl, combine pumpkin with brownie mix and stir until smooth. Add chocolate syrup and stir until blended. The batter will be very thick, but don't add anything else!
Spray a square baking pan (9-inch by 9-inch works best) with nonstick spray. Spread the batter into the pan.
Then spoon peanut butter on top and use a knife to swirl it around.
Bake in the oven for 35 minutes. The batter will remain very thick and fudgy and it should look undercooked.
Allow the fudge to cool, then cover the pan with foil and refrigerate for at least 2 hours. Cut into 36 squares. Then get ready for a fudge frenzy!

PER SERVING (1/36th of recipe, 1 piece):65 calories, 1g fat, 57mg sodium, 13.5g carbs, 0.5g fiber, 9g sugars, 0.5g protein 


Surprise, It's Pumpkin! Enchiladas 


Ingredients 

1/3 cup chopped onion
2/3 cup canned pure pumpkin
1 1/2 tablespoons taco sauce
1 teaspoon taco seasoning mix
2 large corn tortillas
3/4 cup red enchilada sauce, divided
1 slice fat-free Cheddar cheese, halved
1/4 cup shredded fat-free Cheddar cheese
Salt and black pepper, optional
Fat-free sour cream, optional
Chopped scallions, optional

Directions

Preheat oven to 400 degrees F.
Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add onion and, stirring occasionally, cook until it begins to brown, about 2 minutes. Transfer to a bowl.
Add pumpkin, taco sauce, and taco seasoning to the bowl. Mix well. If you like, season with salt and pepper, to taste. Set aside.
Spray a baking pan with nonstick spray and set aside.
Place tortillas on a microwave-safe plate. Warm slightly in the microwave, about 15 seconds.
Lay tortillas flat, side by side. Spread 2 tablespoons enchilada sauce onto each one. Place a half-slice of cheese in the center of each tortilla. Evenly distribute the pumpkin mixture between the centers of the tortillas.
Wrap tortillas up tightly and place them in the baking pan with the seam sides down. Cover with remaining 1/2 cup enchilada sauce.
Bake in the oven until enchiladas are hot, about 8 minutes.
Carefully remove pan from the oven, and sprinkle enchiladas with shredded cheese.
Return to the oven and bake until the cheese has melted, about 5 minutes. Plate those babies and, if you like, top with sour cream and/or scallions. Enjoy!

PER SERVING (1/2 of recipe, 1 enchilada): 188 calories, 2g fat, 948mg sodium, 31g carbs, 5g fiber, 8g sugars, 10.5g protein

Delish!


Watch this video from Hungry Girl - Lisa Lillien.  These look so good and super easy to make.  This is the type of recipe I can handle....anything more is a train wreck. :) 

Ingredients

  • 8 low-calorie chocolate truffles (recommended: any flavor Gayle's Miracles Perfect Chocolate Truffles)
  • 1 (15-piece) box frozen mini fillo shells (recommended: Athens)
  • 15 fresh raspberries

Directions

  • Preheat the oven to 350 degrees F.
  • Slice truffles in half and set aside.
  • Place fillo shells on a baking sheet. Place half a truffle in each fillo shell with the cut-side down.
  • Bake in the oven until truffles are hot and have softened, about 8 minutes.
  • Immediately press a raspberry into the gooey chocolate center of each shell.
  • Allow to cool slightly. Enjoy!

PER SERVING (3 pieces): 100 calories, 4.5g fat, 52mg sodium, 15.5g carbs, less than 0.5g fiber, 7.5g sugars, 1.5g protein

As I was surfing the web I came across this website discussing jobs at Starbucks and how people did on their interviews and if they ended up securing the job or not.  After reading this, it really made me wonder how some people are successful at finding employment.  With the invention of Word and spell check, how can someone make so many mistakes?  Below is one I had to share.  Now, take special notice to what position this person accepted. WOW!  (Gong throw has to be my favorite part.....HA!)

Mr. Coffee Recall



Mr. Coffee stated that they are voluntarily recalling this product and that - "We have received reports that a build-up of steam can force the brewing chamber to open and expel hot coffee grounds and water, posing a burn hazard."   Go here for more info. and what to do if you qualify for the recall.

Is anyone as happy as I am about this recall!!! I hate this machine!  I purchased this Mr. Coffee single serve brewer (knock off brand of a Keurig) last year.  At first it was o.k., but after awhile it started spitting coffee grounds all over the place and into the actual coffee we were drinking. (NASTY)  At the time we just figured it was because it was an off brand and not the real thing.  So last Monday night we went to Elder Beerman to get a real Keurig and we saw the signs posted about this recall.  So, now I have no idea what we are going to do with this new Mr. Coffee that they are sending me.  :(  I wish they would just give me a refund!

belVita Breakfast Cookies/Biscuit


After seeing the commercial that Snookie and Deena from Jersey Shore were in, it sort of took me awhile before I tried these. (Sort of Skeptical -- I was like......what are these?!?! Hangover Cure?) HA!

*** I was hoping to find the commercial video to post.....but, after reading I think that belVita had a lot of negative feedback on the "star endorsers" and they pulled all videos.  ***

But, after I did, I really enjoy the belVita breakfast cookies.  I was so excited when I heard they brought out a chocolate flavor.  I have only had the Golden Oat.  But, they really capture that salty and sweetness that I crave.  Some people disagree with this product b/c they say that they really do not have any "good" nutritional value. Go Here to Read  As I am not disagreeing with this, I am just trying to take smaller steps towards being healthy.  I believe that this product is better than some foods I tend to grab in the morning or nothing at all.  So that is why I like and eat the belVita packs. 

I really like how they come in their own individual packages, they are easy to grab and go.  You can pair these cookies with yogurt or fruit to make a really filling breakfast.  I normally do not pair anything with the packs b/c I do not have a huge appetite in the morning,  so I just sort of munch on these throughout the day.

Metabolism





Do you ever wonder why you can't eat the same diet foods that your friends or family does and not lose weight?  The other day I just happened to be watching Dr. Oz and he said that everyone has a different type of metabolism.  I already knew this, but he made it clearer to me as to why this is such a big deal.  When I was still in college my roommate and I joined weight watchers and we went and bought all those frozen meals.  She ate them everyday and lost weight.  I ate them everyday and it seemed like I was bloated and actually gained more weight than I lost.  I didn't understand it at all.  But, now I sort of have a better grasp on it.  I know now that I can not eat processed foods to lose weight.  I have to eat mostly fresh prepared meals and I know if I stay between 1500 and 2000 calories I can lose weight. The hard part is just doing it!! (ha)


After the show I went to Dr. Oz's website and took the quiz that is available to tell you what type of metabolism you have.  Now, don't expect anything amazing because it is not.  It is very simple.  But, it was neat because it sort of gave me a little bit of any idea of what I need to do a little different. 

I took the quiz and I am a type A Metabolism. It said that I need to add more protein to my diet.  It said that I should have 50% protein, 30% fats, and 20% carbs.    Go here to take the quiz.

Calling All Popeyes

The other day I tried Lean Cuisine's Spinach Dip Snack, and WOW! It totally blew me out of the water. I was not expecting such a great tasting dip from a frozen box. And two it is a low calorie snack? These are totally worth the money. You do not just get one serving, you get two. There are two bowls of spinach dip and two pita halves. I know it doesn't sound like a lot and I was actually thinking that too, before I started it eating it. It is actually very filling and hunger crushing. AWESOME, AWESOME TASTE!!!!! These will definitely be a staple in my freezer.

I also tried the Cheddar Broccoli Dip and it was also very good, but my favorite is the Spinach Artichoke Dip.

I'm Still Here

I just wanted to write a little line telling everyone that I am still here. I have not achieved much as far as my goal. My life has become overrun by fast food drive-thrus, late night "who cares", the usual weekend cook-out binges and b-day parties. Wow! How it just slips away from you so easily.

With school season back in session it feels like the lazy days are over and that old familiar routine comes back again. Maybe I'll get my groove back. LOL!
